Why Canadian Lobsters Are Sustainable

Canada has a long history of managing lobster sustainably, with the first conservation measures put in place in the 1870s. Today, the Canadian Department of Fisheries and Oceans (DFO) works with licensed fishermen to implement conservation methods, such as: 

  • Minimum size restrictions and protection of egg-bearing females
  • Biodegradable twine and escape panels on traps
  • Trap limits and restricted fishery entry
  • Staggered fishing seasons

Our Commitment to Traceability

We ensure every lobster is traceable back to the dock where it was caught. From harvest to delivery, we track each step of the supply chain to maintain transparency and sustainability. This commitment guarantees the freshest, highest-quality lobsters while supporting responsible fishing and giving our customers confidence in their seafood's origins.

We source our Canadian live lobsters directly from independently owned wharfs. Each day the docks trace their landings to the lobstermen who catch them, and we trace our lobsters to each dock where they landed.

Generally speaking, you should expect to get 3.2 oz of meat every 1 lb. of hard-shell lobster, so you can expect about 32-48 ounces of meat per lobster. We recommend 6-8 ounces of meat per person, so we recommend this for a small group of about 4 people.

Lobster is a nutritious seafood rich in lean protein, essential for muscle repair and overall health. It is also an excellent source of omega-3 fatty acids, which support heart health, reduce inflammation, and may improve brain function. Additionally, lobster contains important vitamins and minerals like vitamin B12, zinc, and selenium, promoting immune and nervous system health.

Maine Lobster Now offers next-day delivery for orders placed Monday through Friday by 8AM ET, with delivery available Tuesday through Saturday. Saturday deliveries may require an additional fee and are subject to availability. Orders are shipped with dry ice or gel packs to ensure freshness. Shipping may be affected by holidays or weather conditions. Customers are encouraged to inspect their package upon arrival and report any issues immediately with photos. Handle live lobsters carefully and cook them the day they arrive, as survival isn't guaranteed overnight once delivered. Store them in the refrigerator, either in the box or wrapped in damp paper with seaweed, but do not use an air-tight container, ice, or freshwater. Be cautious when handling lobsters, as their claws and tails can cause injury, especially if they arrive without bands.

To cook a 10-15 pound lobster, bring a large pot of salted water to a boil. Gently place the live lobster headfirst into the pot, ensuring it’s fully submerged. Cover the pot, return the water to a boil, and cook for 38-42 minutes until the lobster shell turns bright red and the meat is opaque. Once cooked, remove the lobster, let it cool for a few minutes, then crack the shell and serve with melted butter or your preferred dipping sauce.

To ensure your lobster is perfectly cooked and safe for consumption, cook it to an internal temperature of 145°F (63°C). For accuracy, use a meat thermometer to check the thickest part of the tail. Once it reaches this temperature, your lobster is ready to enjoy!
