Care and Cooking When Your Lobsters Arrive
Cook live lobsters on the day they arrive. Until cooking, keep them cool, damp and ventilated in the refrigerator and follow the care instructions in your box. Do not submerge them in tap or standing water, seal them in an airtight container, or freeze them. Do not cook or eat a dead or nonresponsive lobster; report an arrival issue promptly.
A Quick Cooking Reference
Boiling and steaming are common methods for whole live lobster. Choose cooking times by each lobster’s weight, rather than the number in the pot. Check the thickest tail and claw meat for 145°F and a pearly, opaque appearance. Use our complete guide for preparation, equipment and size-specific cooking instructions.
