Our Commitment to Sustainable Seafood

Seafood sourcing & sustainability

Great seafood.
A future worth protecting.

From our home in Maine, we’re committed to sustainable seafood and the people who bring it to your table. Across everything we carry, our goal is the same: thoughtful sourcing that supports healthy waters and seafood for generations to come.

Our approach

Four principles.
One sourcing commitment.

These principles guide our approach to seafood, whether it comes from a wild fishery or a farm.

01

Known origin

Understand the species, where it comes from, and how it was caught or raised.

02

Long-term viability

Support harvest and farming practices that protect the future of the resource.

03

Environmental protections

Consider the measures in place to protect habitats, wildlife, and water quality.

04

Traceability

Connect seafood to its source through supplier information and ongoing review.

From the source

A thoughtful approach to every kind of seafood.

Cooked lobster served with lemon and melted butter

Lobster & crab

Our roots are in Maine lobster. Across lobster and crab, we support fishery management that protects breeding populations, controls harvest, and addresses the effects of fishing on marine life.

Wild fish

Salmon, whitefish, and tuna come from distinct fisheries. We consider the species, harvest area, and fishing method, with scientific stock information and fishery protections informing our sourcing approach.

Scallops, oysters, clams & mussels

Shellfish connect us closely to coastal waters. Our approach considers harvest controls for wild sources and the growing methods, water quality, and environmental protections of shellfish farms.

Farmed fish & shrimp

We look to named producers for documented farming practices and credible certifications. Their information helps explain how our farmed seafood is raised and how environmental impacts are managed.

The same commitment extends to the seafood ingredients in our prepared dishes and specialty products.

Informed by evidence

Good sourcing starts with good information.

Our approach draws on public fishery science and management information from NOAA and regional authorities, alongside supplier documentation. For farmed seafood, certifications such as BAP and ASC can provide additional information about the producer and certified operations.
