Why The Maine Lobster Fishery Is Considered Sustainable

Maine's lobster fishery is considered one of the most sustainable in the world. Some of the regulations that ensure sustainability include:

  • Size Regulations: Fishers must release lobsters that are either too small or too large, protecting juvenile and breeding adults.

  • Protection of Egg-Bearing Females: Egg-bearing females are marked with a V-notch and released, protecting important breeders.

  • Trap Limits and Gear: Trap limits and escape vents prevent overfishing and allow smaller lobsters to grow.

  • Limited Entry: The fishery limits the number of licenses issued, controlling the number of active participants to prevent overfishing.

Our Commitment to Traceability

We ensure every lobster is traceable back to the dock where it was caught. From harvest to delivery, we track each step of the supply chain to maintain transparency and sustainability. This commitment guarantees the freshest, highest-quality lobsters while supporting responsible fishing and giving our customers confidence in their seafood's origins.

We source our live lobsters directly from independently owned wharfs, some just a few miles from our headquarters here in Maine and others all along the coast. Each day the docks trace their landings to the lobstermen who catch them, and we trace our lobsters to each dock where they landed.

Generally speaking, you should expect to get 3.2 oz of meat every 1 lb. of hard-shell lobster. We recommend least 6-8 ounces of meat per person so we recommend 2 of these per person.

Lobster is a nutritious seafood rich in lean protein, essential for muscle repair and overall health. It is also an excellent source of omega-3 fatty acids, which support heart health, reduce inflammation, and may improve brain function. Additionally, lobster contains important vitamins and minerals like vitamin B12, zinc, and selenium, promoting immune and nervous system health.

Lobsters weighing 1 lb. cannot be shipped to CT, NJ, or NY. Maine Lobster Now offers next-day delivery for orders placed Monday through Friday by 8AM ET, with delivery available Tuesday through Saturday. Saturday deliveries may require an additional fee and are subject to availability. Orders are shipped with dry ice or gel packs to ensure freshness. Shipping may be affected by holidays or weather conditions. Customers are encouraged to inspect their package upon arrival and report any issues immediately with photos. Handle live lobsters carefully and cook them the day they arrive, as survival isn't guaranteed overnight once delivered. Store them in the refrigerator, either in the box or wrapped in damp paper with seaweed, but do not use an air-tight container, ice, or freshwater. Be cautious when handling lobsters, as their claws and tails can cause injury, especially if they arrive without bands.

To cook a 1-pound lobster, bring a large pot of salted water to a boil. Once boiling, carefully place the live lobster headfirst into the pot, making sure it’s fully submerged. Cover the pot and bring the water back to a boil, then cook for 8-10 minutes until the shell turns bright red and the meat is opaque. Remove the lobster from the pot, let it cool for a few minutes, then crack the shell and serve with melted butter or your preferred sauce.

To ensure your lobster is perfectly cooked and safe for consumption, cook it to an internal temperature of 145°F (63°C). For accuracy, use a meat thermometer to check the thickest part of the tail. Once it reaches this temperature, your lobster is ready to enjoy!

What a fresh lobster ever

It was the freshest lobster I’ve ever had. I don’t know if you’ve ever tried lobster tail as sashimi, but it’s absolutely delicious. The meat is firm and bouncy, with a sweet flavor that intensifies as you chew. Since the lobster was extremely fresh, we enjoyed the tail as sashimi and steamed the rest. Our guests were all blown away by how good the lobster tasted.

Thanksgiving twist!

We modified our Thanksgiving to accommodate conflicting commitments on Thanksgiving Day and had live lobsters delivered the Saturday before. It was an awesome experience and a fantastic meal. We are still talking about it!
