Yes These Are Dry Scallops....But What Does It Mean To Be A "Dry" Scallop?

When it comes to scallops, the term "dry" refers to scallops that are completely natural and untreated, meaning they haven’t been soaked in any preservatives, chemicals, or solutions. This is a significant distinction because many scallops on the market are labeled as “wet” or treated with a phosphate solution, which causes them to absorb water. This added water artificially increases the weight and dilutes the flavor of the scallops, leading to a less desirable texture and taste when cooked.

- If keeping fresh, we recommend using the day of receipt.
- If freezing, keep frozen at or below 0℉.
- Do not allow food to warm above 38℉ prior to cooking.
