Sustainably Sourced Maine Lobster

These tails come from wild-caught Maine lobster. We source our Maine lobster from two trusted partner docks and can trace it back to the dock where it was landed. Maine’s lobster fishery is managed for sustainable harvest, with size limits, protections for egg-bearing and V-notched females, and trap rules that support the future of the fishery.

Unmatched Quality and Freshness

To deliver lobster that is more fresh and better tasting than our competitors, we immediately flash-freeze lobster tails using a proprietary liquified nitrogen process to seal in freshness. This means you get lobster delivered to your door that tastes like it just came off the dock. Order 3-4 oz. lobster tails today to bring a taste of Maine home, wherever you live.

Health Advisory: Consuming raw or undercooked shellfish may increase your risk of foodborne illness, especially if you have certain medical conditions. If you’re not sure how to prepare lobster, please review our cooking directions.

Generally speaking, you should expect to get 50% of cooked lobster tail meat out of every raw lobster tail once cooked, so you can expect about 2 ounces of meat per 4 ounce lobster tail. We recommend 6-8 ounces of cooked meat per person so we recommend at least two 4 ounce raw lobster tails per person.

Lobster is a nutritious seafood rich in lean protein, essential for muscle repair and overall health. It is also an excellent source of omega-3 fatty acids, which support heart health, reduce inflammation, and may improve brain function. Additionally, lobster contains important vitamins and minerals like vitamin B12, zinc, and selenium, promoting immune and nervous system health.

Frozen lobster tails should be thawed in the refrigerator for 24 hours to prevent the meat from sticking to the shell. It’s important to cook the tails within 2 days of thawing to ensure freshness. Never thaw a lobster tail in warm water or at room temperature, as this can affect the quality. If the lobster is not properly thawed before cooking, the meat can become tough and may stick to the shell, leading to a less enjoyable dining experience.

Why Nitrogen Freezing Is Better

Thanks to our nitrogen freezing process, our lobster tails, when properly handled, can be virtually indistinguishable from fresh lobster tails. This method also prevents the meat from sticking to the shell when thawed overnight in the refrigerator. Learn more about the benefits of our nitrogen freezing process.
