Pan-Seared Icelandic Cod with Charred Corn & Tomatoes

Make a colorful seafood dinner with tender, pan-seared Icelandic cod topped with charred corn, cherry tomatoes and red onion. This simple recipe uses olive oil, salt and pepper to let the fish shine, then finishes with fresh parsley. Serve with green beans and rice pilaf, if desired.
Ingredients List
- 1 pound Maine Lobster Now Icelandic Cod
- ¾ teaspoon flaky sea salt
- ¼ teaspoon ground black pepper
- 3 tablespoons extra-virgin olive oil, divided
- 2 ears corn, shucked and kernels removed
- ½ cup cherry tomatoes, halved
- ¼ cup finely chopped red onion
- Fresh parsley, for garnish

1. Remove Cod from Package.
Remove cod from the Maine Lobster Now package and pat dry with a paper towel.
2. Season Cod.
Season cod evenly on both sides with salt and pepper.
3. Cook Cod.
Heat 1 tablespoon olive oil in a medium skillet over medium-high heat. Place cod in the center of the pan and drizzle with 1 tablespoon olive oil. Cook for 4–5 minutes, then carefully flip and cook for another 3–5 minutes, depending on thickness, until the center is opaque and flakes easily with a fork and the internal temperature reaches 145°F.
4. Cook Corn, Tomatoes and Red Onion.
Add the remaining tablespoon of olive oil to a small skillet over medium-high heat. Add corn, tomatoes and red onion. Cook for about 5 minutes, stirring occasionally, until the corn is lightly charred and the tomatoes and onion are softened.
5. Top Cod with Charred Corn, Tomatoes and Red Onion.
Remove cod from the pan and top evenly with the charred corn, tomatoes and red onion.
6. Garnish & Serve.
Garnish with fresh parsley. Serve hot with fresh green beans and rice pilaf, if desired.
